    - Step 1 -
    Set the oyster firmly against the vertical plate, and insert the knife's blade between the upper and lower shells from behind. At this stage, only hold the knife handler, don't grip it!
     
   
     
    - Step 2 -
    Thrust the blade vigourously about one centimetre into the oyster : it's open!
Keep the tip of the blade pointing upward to fully detach the oyster upper shell.

    - Step 3 -
    With the point still upward, push the blade to separate the 2 shells.
       
   
     
    - Etape 4 -
    As you will notice, the upper shell is clean, there's no debris in the oyster, and whatever little water drips down falls straight into the waste bucket that you did not fail to hook where it belongs.
